Pear-Gorgonzola Crostini

Ingredients:
1 8 ounce package cream cheese, softened
1/2 cup finely chopped asian pear
2 tablespoons crumbled gorgonzola cheese
1 tablespoon minced chives
1 baguette, sliced into 1/4 inch thickeness and toasted
Directions:

Chutney-Chicken Stars

Ingredients:
1 sheet frozen puff pastry, thawed
1 cup rotisserie chicken, diced
2-3 tablespoons spiced chutney
1 green onion, sliced
Directions:
Preheat oven to 400° F.  Unfold puff pastry sheet.  Using a 2 inch star cookie cutter, cut into small stars.  Prick with fork. Lay puff pastry stars onto parchment covered baking sheet.  Bake for 5-6 minutes, or until just golden.

Salmon Mousse Tarts

Ingredients:
1 8 ounce package cream cheese at room temperature
1/3 cup cold smoked salmon
1 teaspoon fresh dill, chopped
1 teaspoon lemon zest
1 package frozen mini phyllo shells
In a medium mixing bowl, whip the cream cheese until fluffy.  Add the salmon, dill and lemon zest. Continue mixing until well combined.

Date Rumaki

Ingredients:
24 pitted dates
24 almonds
8 slices bacon, cut into thirds
24 wooden picks soaked in water for 30 minutes

Directions:

Fill the date with one almond. Wrap with bacon, securing with a wooden pick.  Place on a baking rack covered baking sheet.  Cook in a 350° F preheated oven for 30 minutes, or until bacon is crisp.



Mint Tart

Ingredients:
1/2 cup mint chips
2 tablespoons heavy cream
1 8 ounce package cream cheese
1 package frozen mini phyllo shells
1 candy cane, crushed
Directions:
Place mint chips and cream in a microwave proof dish.  Heat on high for 30 to 40 seconds.  Stir until smooth.

Ingredients:

1 sheet frozen puff pasty, thawed
3-4 figs, stems removed and sliced lengthwise
2-3 tablespoons gorgonzola cheese, crumbled
2-3 chives, chopped

Directions:

Preheat oven to 400° F.  Unfold puff pastry sheet.  Cut into small rectangles, about 1×2 inches.  Prick with fork. Lay puff pastry rectangles onto parchment covered baking sheet.  Bake for 5-6 minutes, or until just golden.

Grape-Cheese Balls rolled in Nuts

Ingredients:

1 8 ounce package cream cheese, softened
2 dozen seedless, grapes, washed and dried
1 cup chopped nuts (peanuts or pecans are great choices)
Directions:
Flatten 1 tablespoon portion of cream cheese in the palm of your hand.  Place a grape over the cream cheese; roll to cover grape with cream cheese.  Roll in chopped nuts and serve.
