Beef Stew

This Midwestern classic is full of beef and vegetables.
 
1 pound beef stew meat
1/3 cup all purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons vegetable oil
1 medium onion, diced
2-3 carrots, cut into 3 inch pieces and halved or quartered

This chowder is creamy and delicious with a Southwest flair.

2 tablespoons butter
1 tablespoon extra-virgin olive oil
1 medium sized sweet onion, diced
6 cups frozen southwest style corn (with bell peppers)

Ingredients:
2 cups Panko (Japanese bread crumbs)
4 cups leftover mashed potatoes
2 eggs, slightly beaten
1 green onion, thinly sliced
1 clove garlic, minced
1/2 cup grated sharp cheddar cheese
1/4 cup minced leftover ham (or bacon bits)
1 quart vegetable oil for deep frying

1/3 cup leftover mashed potatoes
1/4 cup leftover gravy
Chicken or vegetable stock

2 tablespoons onion, chopped
1 clove garlic, minced
1 cup cooked turkey, diced
½ teaspoon cumin, ground
2 tablespoons cilantro, chopped

Turkey-Mango Salad Wrap

Ingredients:
 
2 cups cooked turkey, diced
1 cup mango, diced
1 stalk celery, diced
1/2 small red onion, diced
1/4 cup cilantro, chopped
1 teaspoon chili powder
1 tablespoon roasted peanut oil
4 cups baby greens
4 tortillas
Balsamic vinaigrette dressing to taste

Cranberry Smoothie

Ingredients
2 (8 ounce) containers vanilla yogurt
1 cup leftover cranberry sauce, whole berry or jellied
1/2 cup orange juice
3 cups crushed ice
6 Mint leaves
1 teaspoon lime juice
Directions:
In a blender, blend all ingredients until smooth.  Add more juice as needed.  Serve immediately.
Serves 2-4
